Ingredients

  • 1.25 lb (570 g) boneless, skinless chicken breasts, thinly sliced
  • 2 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried Italian seasoning (or oregano + basil)
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt, plus more to taste
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • 6 large flour tortillas (8–10 inch)
  • 1 1/2 cups shredded mozzarella or Monterey Jack cheese
  • 1/2 cup finely grated Parmesan
  • 2 cups shredded romaine or mixed lettuce
  • 1 medium tomato, diced (optional)
  • 1/4 small red onion, thinly sliced (optional)
  • Fresh parsley or chives, chopped (for garnish)
  • Creamy Garlic-Herb Sauce:
  • 1/2 cup mayonnaise
  • 1/2 cup plain Greek yogurt or sour cream
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 small garlic clove, finely grated
  • 2 tbsp finely chopped fresh parsley (or 1 tsp dried)
  • 1 tbsp finely chopped dill or chives (optional)
  • 1/4 tsp kosher salt, to taste
  • Pinch of black pepper

Instructions

  1. Make the sauce: In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon, grated garlic, parsley, dill or chives, salt, and pepper until smooth; taste and adjust seasoning, then refrigerate.
  2. Season the chicken: Pat chicken dry and toss with 1 tbsp olive oil, minced garlic, smoked paprika, Italian seasoning, onion powder, 1/2 tsp salt, black pepper, and lemon juice until evenly coated.
  3. Cook the chicken: Heat remaining 1 tbsp olive oil in a large skillet over medium-high; add chicken in an even layer and cook 5–7 minutes, stirring occasionally, until browned and cooked through (165°F/74°C). Transfer to a plate and tent to keep warm.
  4. Warm the tortillas: Wipe the skillet if needed; warm tortillas one by one over medium heat 15–20 seconds per side until pliable, or stack and microwave wrapped in a damp towel for 30–45 seconds.
  5. Build the wraps: Spread 1–2 tbsp creamy sauce down the center of each tortilla. Layer with warm chicken, a handful of lettuce, tomato and red onion if using, then sprinkle mozzarella and Parmesan.
  6. Fold and melt: Fold the sides in and roll tightly. Place seam-side down in the warm skillet over medium-low heat 1–2 minutes per side until the cheese melts and the wrap is lightly golden.
  7. Finish and serve: Slice in half if desired, drizzle or serve extra sauce on the side, and garnish with chopped parsley or chives. Enjoy immediately.

Tips for Best Results

Slice thin for speed: Thin chicken strips cook fast and stay juicy. If using thicker breasts, butterfly before slicing.

Control the garlic: Raw garlic in the sauce is punchy. For a milder flavor, roast a clove or grate half a clove instead.

Cheese choice matters: Monterey Jack melts luxuriously; mozzarella is mild and stretchy; a little sharp cheddar adds tang. Keep Parmesan for savory depth.

Crisp factor: For extra crunch, add thin cucumber or shredded cabbage. Pat veggies dry so the wrap doesn’t get soggy.

Make it a press: After rolling, press the wrap in a panini press or weighted skillet for a café-style finish.

Variations

Spicy kick: Add 1/2–1 tsp crushed red pepper or a dash of hot sauce to the chicken seasoning. Stir chili crisp into the sauce for a garlicky heat.

Bacon-ranch vibes: Swap Italian seasoning for ranch seasoning and add 2 strips cooked, crumbled bacon per wrap.

Green goddess: Blend the sauce with a handful of spinach and herbs for a bright green, veggie-forward drizzle.

Low-carb or gluten-free: Use low-carb or gluten-free tortillas, or wrap in large lettuce leaves; serve cheese on the chicken while still in the pan to melt.

Air fryer method: After assembling, brush the wraps lightly with oil and air fry at 375°F (190°C) for 4–6 minutes, turning once, until crisp and melty.

Make-Ahead and Storage

Meal prep: Cook and cool the chicken, then refrigerate up to 4 days. Keep sauce and veggies separate. Assemble and toast wraps just before serving.

Reheating: Rewarm chicken in a skillet with a splash of water or broth to keep it juicy. If reheating a finished wrap, use a skillet or air fryer so it stays crisp.

Freezer: Freeze cooked, sauceless wraps tightly wrapped for up to 2 months. Thaw overnight, then toast and add sauce after warming.

Serving Ideas

Pair with roasted potatoes, a simple cucumber salad, or a cup of tomato soup. Add pickles, pepperoncini, or a squeeze of lemon at the table to brighten every bite.
